Kombucha ““ what on earth is it anyway? When I first found out about kombucha, I can’t say I was very interested. After all, it’s made of black tea and sugar that’s been fermented with a thick, white, slimy mushroom floating at the top. But when I actually tried it, I was really amazed.

I felt an immediate sense of effervescence and energy run through my entire body. Kombucha is literally alive. The mushroom creates a living brew that is full of probiotics, enzymes and amino acids. Kombucha boasts a wide variety of health benefits and is considered a holistic remedy for a long list of ailments.

Kombucha is actually quite delicious and you can’t help but feel the immediate giddy rush after drinking even just a few sips. Different brands taste very different, so if you don’t like one brew, try another. GT’s and Kombucha Gold are my personal favorites.

    Wow. That sounds too much fun to miss.

    So does the ’scoby’ physically stop the liquid reacting with the air and going stale?

    Well, note that Kombucha does have a shelf life. You let the scoby work with the tea and sugar for about 10 days and then you have to refrigerate it. You don’t want to ferment Kombucha too much.

    In the fridge, it has a life of about 4-5 days. Obviously the bottled varieties last longer, but homemade I’ve found that it should be consumed pretty quickly.

    If you’re really interested in making it, please find proper instructions online. There are proportions to follow for best fermentation and sterilizing the jars beforehand is also extremely important!

    Can we expect a DIY guide to Kombucha? I’m an avid tea drinker, so it’d be interesting to experiment with different brews. ^__^

    Hey guys, let me tell you that I love kombucha, but haven’t actually brewed it myself. I shared a kitchen with a friend who had her jars of tea and mushrooms going, and I did pay attention. But I can’t say I’ve done it all my by myself. Anybody else out there with more experience? I’m just an experienced connoisseur. ;)
