Giving in to Carbs? Here's a Tasty Way to Reduce the Blood Sugar Spike

Sometimes you just can’t resist snacks or simple carbohydrates that will make your blood sugar spike (and subsequently crash). It’s good to have a few tools to help maintain stable glucose levels throughout the day so your energy, mental clarity and mood don’t suffer.
If you eat a piece of white bread by itself, it digests very quickly and leaves your body without lasting nutritional sustenance. But did you know that if you combine that piece of bread with a few nuts or dip it in balsamic vinegar, your body will be able to digest the food much more slowly? This will help keep your blood sugar at a regulated level and give you sustained energy rather than a short burst that quickly fades away.
Vinegar helps to offset the blood sugar spike that can come with that afternoon bowl of ravioli. (This is why sushi, despite the refined white rice, is healthy for you. The vinegared rice helps to keep your blood sugar in a healthy range.)
Tip: Enjoy balsamic vinegar when eating starchy snacks and foods. For example, top that ravioli with balsamic vinegar and pine nuts or Marcona almonds. (The healthy fats in nuts also help maintain normal blood sugar levels.)
