7 Foolproof Salad Recipes for the Hopeless Cook

I’m a healthy food advocate, but I sure am a bad cook. No, seriously, even though I use the finest ingredients, my food usually turns out kind of...bland. (As I'm nicely putting it.) My solution: I simplify.

Consider these seven easy meals as fast food, eco-style. If you just got home from a workout or a long day at the office, you’re hungry. Don't reach for the Cheetos! You need a light meal, or something to tide you over until the entrée is ready. Tasty, simple salads are the perfect "fast food". All you need are fresh, organic ingredients and a bowl! All recipes are easy, nutritious, eco-friendly, tasty, and require zero cooking or expertise.

Here they are - seven ridiculously simple salad recipes:


My very favorite, Caprese salad, simply consists of tomato, mozzarella, and basil.

Sweet and satisfying: baby spring greens, dried cranberries and cottage (or feta) cheese.

Fruit crunch: sliced banana, sliced mango and sunflower seeds.

Nutty antipasto: cold leftover green beans, marinated artichoke hearts and pistachios.

The classic: grated carrots, raisins and lemon juice. (Let this one marinate a little bit.)

The Mini-Waldorf: baby spring greens, sliced apples and walnuts.

Wrap it up: cucumber and avocado slices, wrapped in a sheet of Nori.

The possibilities are endless. Just look in your fridge, whip up some touski, and let us know what you came up with!
