Say Yes to Yacon

Here I’ve been, contentedly using agave syrup all this time when my superfood-obsessed friend informed about something even better: yacon. A South American tuber with a naturally sweet taste, yacon is low in calories and is glucose-free. The sugars are complex, making them healthier for your body to digest. Talk about sweetening the deal.
Yacon also has medicinal properties. The syrup aids digestion, helps your immune system fight off infection and can even help lower blood pressure. All from the same Andean highlands that bring us high-protein quinoa and sex-drive-enhancing maca. There must be something in the air up there”¦
Try an 8oz bottle of yacon syrup for $14.95 from Sunfood.

I was hoping yacon was bacon infused syrup which would have enhanced many things for me.
I’ll try it, I’ll just have bacon on the side…

Amy, your first thought was mine too.
Sarah, in comparison to other syrups, how does yacon taste? Complex sugars always seem to hold the flavor better, in my experience – both their own and any neighboring them in a dish….

I’ve heard of yacon but haven’t tried it yet…maybe this time I will…
Maybe something in the Andean air, huh? Very well could be, who knows? Thanks for the tip =)

Sarah, I too was using aqave most of the time or stevia. Last night I made the most amazing live cocao bar using half yacon and half aquave. Here is my recipe for one live chocolate bar that is filled with anti-oxidants and so good for us! Glad you noticed the yacon article.
I use a magic bullet, and put in:
2 Tbls cocoa powder
2 Tbls raw cashew butter
1 and 1/2 Tbls Aqave
1 and 1/2 Tbls Yacon Syrup
1 dessert spoon Maca Powder
2 Tbls coconut oil
2 Tbls raw rice protein powder
1 teaspoon New Chapter Berry Green Superfood (optional)
other optionals:
peppermint oil
chopped nuts or dried fruit
put on waxed paper, shape into a flat bar, then put in freezer. Its ready in about ten minutes.
Wow, yummy! Enjoy.
